Yesterday was my 30th Birthday and I made my very most favorite cake. It's called a Strawberry Cake Triffle. A nurse/friend at work made this and gave me the recipe. It's to die for! It does require a large triffle bowl, I found mine at Walmart and I want to say I paid between $25-30 for it and it also doubles as a Cake stand with a lid if you turn it upside down. Just a warning, you do need to make the pastry cream the day before, so allow yourself the time to do that.
Strawberry Cake Triffle
2 c heavy cream
4 T cornstarch
4 egg yolks
4 t vanilla (divided)
2 c half and half
2 pinches of salt
2 c sugar
4 quarts of strawberries
1 white cake mix (and ingredients)
white chocolate
milk chocolate (optional)
1 c whip cream
1/2 c powdered sugar (divided)
2 packages of cream cheese
2 T butter
So the day before you want the cake, make the pastry cream. Take sugar and corn starch and whisk together then mix with heavy cream. Whisk egg yolks separate. Place over medium high heat. Add egg yolks, 2 t vanilla, half and half and salt and stir constantly until thickens to consistency of sour cream (about 10 minutes). Place in bowl with plastic wrap tightly over. Cool in fridge over night.

The next day, make 2 round white cakes. Once they are cool, cut in half horizontally so that you have 4 round cakes.
Dip 14 strawberries in white chocolate. Puree 1/2 and slice other 1/2 of remaining strawberries.
Divide pastry cream from the first day into 2 separate bowls. In the first bowl, add whip cream, 1 t vanilla and 1/4 c powdered sugar. In the second bowl, add cream cheese, butter, 1 t vanilla and 1/4 c powdered sugar.
Next begin to layer. Layers are as follows:
2 scoops whip cream mix
puree strawberries
sliced strawberries
cake
pastry cream
puree strawberries
sliced strawberries
cake
2 scoops whip cream mix
puree strawberries
sliced strawberries
cake
pastry cream
puree strawberries
sliced strawberries
cake
rest of whip cream mix over top
puree strawberries
sliced strawberries
melted white or milk chocolate drizzled over top
place dipped strawberries on top
How to serve? well, it doesn't look as pretty as it does in the triffle bowl, but just scoop it in to bowls. It's absolutely delicious, rich, beautiful and a crowd pleaser. Enjoy!
